Refresh your understanding of the Codex HACCP Principles and how they are applied to the development and review of a HACCP plan. This course meets Coles and Woolworths HACCP refresher training requirements but excludes Woolworths vendors being audited to WQAv7-Service Providers or WQAv6- Pet Foods.

 Course Outline

This course covers the following topics:

  1. Review of hazards and control measures
  2. Undertaking a hazard analysis
  3. Identification of Critical Control Points
  4. Monitoring procedures, corrective action and verification

 Learning Outcomes

On successful completion of this course, participants will obtain the knowledge on how to:

  • Interpret the regulatory requirements in Australia
  • Identify and distinguish between microbial, physical, chemical (including allergens) and quality hazards to products and consumers
  • Follow the 12 steps used in developing a HACCP plan
  • Review process flow charts, HACCP plans and HACCP audit tables.


Upon completion of all formal assessments, participants will receive Nationally Accredited units stated below:

All individuals who are enrolled in, or completing nationally recognised training will require a Unique Student Identifier (USI). A USI number is required before a Statement of Attainment or Diploma can be issued. Go to the USI Student Portal to obtain a USI at no cost.

This course also contributes to the Food Science education requirements for Level 4 Auditors within the Exemplar Global National Food Safety Auditor (NFSA) scheme.

 Who Should Attend?

This course is the ideal refresher course for food industry professionals working in Manufacturing, with fresh produce, Research & Development, Quality Assurance/Quality Control, Business Owners or Management who need to obtain a practical understanding of the HACCP methodology and how to use it within their business. It is not suitable for participants who have not completed formal HACCP training.


Participants must have successfully completed a recognised two or three day HACCP course in the last 5 years. Please check with your local regulatory agency or certification body for additional requirements.
