This course covers the underpinning knowledge of food safety and regulatory Standards required by food safety auditors. It presents the methodology in accordance with the requirements of ISO 19011 ensuring that audits are planned, conducted, reported and documented in a systematic and thorough manner.

It is presented by experienced Food Safety Auditors. This course meets the knowledge requirements of the Food Safety Auditor certification and the NFSA scheme, and has been certified by EXEMPLAR GLOBAL for that purpose.

  7. Food Safety Programs
  8. Conducting audits.

 Learning Outcomes

On successful completion of this course, participants will understand:

  1. The regulatory environment in which auditors have to operate
  2. The process for achieving recognition as a food safety auditor
  3. The requirements of food safety Standards in general, and ISO 22000:2005 specifically
  4. The principles and practice of food safety auditing


Upon completion of all formal assessments, participants will receive Nationally Accredited units stated below:

Statement of Attainment

  • FDFAU4001A Assess compliance with food safety programs
  • FDFAU4004A Identify, evaluate and control food safety hazards
  • FDFAU4002A Communicate and negotiate to conduct food safety audits

The following units of competency are also available for students completing this course following the successful completion of all in-class course assessment tasks. These units count towards the BSB51615 Diploma of Quality Auditing pathway;

  • BSBAUD501 Initiate a quality audit
  • BSBAUD503 Lead a quality audit
  • BSBAUD504 Report on a quality audit
  • BSBAUD402 Participate in a quality audit

On successful completion of the post course assessment, students are eligible to receive the following two additional units of competency; FDFAU4003A Conduct food safety audits and Exemplar Global NFS3 Conduct food safety audits

 Who Should Attend?

This course is ideal for those who wish to become registered food safety auditors or who wish to thoroughly understand the external audit process to improve their company’s certification performance. It is also recommended for staff undertaking supplier audits.


This course does not have any pre-requisite units for entry.

It is recommended that participants should have at least four years' experience in food manufacturing or equivalent, at least two years' experience in quality assurance/ quality control function in the food industry. It is assumed that participants have sufficient skills and knowledge in HACCP. Alternatively participants should complete the course Principles and Applications of HACCP before enrolling in this course.

This course meets the Exemplar Global competency requirements for the qualification based Food Safety Auditor scheme and the competency based National Food Safety Auditor scheme (NFSA).

Please note that completion of this course does not guarantee that you will qualify to be registered as a food safety auditor.

The requirements for Auditor registration and re-registration with Exemplar Global are available from the Exemplar Global website (

Additionally, if you are wanting to register as a regulatory auditor, we highly recommend that you contact the appropriate state department to understand the auditor approval process.

Access to a workplace is required for the completion of post course assessment activities.

As an accredited course, this course contains assessment requirements. The course contains a series of in-class assessment activities designed to reinforce the key skills and knowledge outcomes and also has post course assessment requirements and has in-class knowledge checks at the end of each day.

What are the terms and conditions for this course?

You can find a copy of the terms and conditions as well as a copy of the Student Handbook. The student handbook is a comprehensive summary of student rights and obligations and SAI Global learning policies and practices.

How do I access my certificate?

Your Statement of Attendance will be sent to you on completion of the course. If the course has a Statement or a Certificate of Attainment you will be emailed this as a pdf on successful completion of all course assessment requirements. This will take up to 28 days once attainment of the relevant units of competency is confirmed by the assessor.

Yes, you will need access to a workplace in order to complete the post course assessment requirements. If this is not possible please contact customer support.

How long does it take to complete the post course assessment requirements?

Most students take between 20-30 hours to complete post course assessment requirements over a 6 month period. If you need longer than this you can apply for a 6 month extension. Contact customer support for further information or to apply for an extension.

How do I apply for Exemplar Global recognition?
