 Learning Outcomes

On successful completion of this course, participants will obtain the knowledge on how to:

  • Describe how internal food safety audits contribute to the maintenance and improvement of Food Safety Management Systems
  • Identify the key elements of audit schedules and audit plans
  • Develop an audit checklist
  • Conduct an internal food safety audit and gather objective evidence
  • Classify non-conformities as Major, Minor, Critical or as an Opportunity for improvement
  • Develop an Audit Report
  • Identify the best practices for ensuring your internal audits are a success

All individuals who are enrolled in, or completing nationally recognised training will require a Unique Student Identifier (USI). A USI number is required before a Statement of Attainment or Diploma can be issued. Go to the USI Student Portal to obtain a USI at no cost.

 Who Should Attend?

This course is ideal for food industry personnel intending to become involved in the internal audit process for the maintenance and improvement of their food safety program.

This course is not suitable for school leavers without any experience in the Food Industry and is ideal for management and personnel who have had at least four years experience in the food industry.


This course does not have pre-requisite units for entry. We recommend that participants have completed at least a one day HACCP course or the online HACCP Refresher course.

Note: access to a workplace is required for the completion of post-course assessment activities.

The course is delivered by experienced facilitators who have hands on experience in the practice of food safety auditing. Does this course have any assessment requirements?

As an accredited course, this course contains assessment requirements. The course contains a series of in-class assessment activities designed to reinforce the key skills and knowledge outcomes and also has post course assessment requirements and has in-class knowledge checks at the end of each day.

What are the terms and conditions for this course?

You can find a copy of the terms and conditions as well as a copy of the Student Handbook. The student handbook is a comprehensive summary of student rights and obligations and SAI Global learning policies and practices.

How do I access my certificate?

Your Statement of Attendance will be sent to you on completion of the course. If the course has a Statement or a Certificate of Attainment you will be emailed this as a pdf on successful completion of all course assessment requirements. This will take up to 28 days once attainment of the relevant units of competency is confirmed by the assessor.

What if I require assistance in completing this course? For example: Literacy, numeracy, physical, vision or hearing support.

Do I need access to a workplace to complete the assessment requirements for this course?

Yes, you will need access to a workplace in order to complete the post-course assessment requirements. If this is not possible please contact customer support.

How long does it take to complete the post-course assessment requirements?

Most students take between 20 to 30 hours to complete post course assessment requirements over a 6 month period. If you need longer than this you can apply for a 6 month extension. Contact customer support for further information or to apply for an extension.

How do I apply for Exemplar Global recognition?

Once you have completed all the assessment requirements of this course for Exemplar Global you can apply to Exemplar Global as a "provisional auditor". For more information, please refer to Exemplar Global Certification.
